P & J’s Waffle Delight

For the 94th week of "7 QUESTION SUNDAY" we shine the spotlight on another influential individual from the PNW. P & J’s Waffle Delight is a popular food truck in western Washington serving up twists on an old favorite.

4EVRGRN: Hey, P&Js! Tell us a little about yourselves.

P&Js: Hello everyone! Owners James and Paige Meeks want to welcome you to P&J's Waffle Delight, our Chicken & Waffles Food Truck located in Parkland/Spanaway Washington. We are educators and coaches by day, and food truck entrepreneurs by night and weekend.  We consider ourselves foodies which prompted us to open up our own food business.  You can find our food Truck at the Dryer Masonic Center in Parkland weekly on Wednesdays, Fridays, Saturdays, and Sundays.  We have recently partnered with Acorn Brewery in Edgewood, WA to be there on Thursday evenings

What is the first thing someone should try from your menu?

P&Js: If you have never had chicken & waffles before we highly recommend our OG (Original Chicken & Waffles) If you have had it before we invite you to step out of your comfort zone and try our L.O.L which is our homemade waffle, and our L.O.L chicken.  The L.O.L sauce is a tangy,sweet,garlic sauce!

How are you enjoying food trucking in the PNW?

P&Js: We enjoy it! We love the people, and the people seem to love our food! The rain and cold during the winter can sometimes put a little damper on our parade, but we are out serving weekly so come find us!

What’s more popular in the PNW, sweet or savory?

P&Js: When we first started our business in 2014 sweet was more popular.  A lot of people had never had chicken & waffles before and were very nervous to try it.  They wanted the chicken & waffle separate.  But now in 2021, definitely savory!

Favorite place in the PNW to visit?

P&Js: From the P in P&J's: Lake Chelan, the J prefers Seattle because it reminds him of back home in the Bay Area

Favorite local product?

P&Js: We are foodies, James loves the Dungeness crab in the Puget Sound, and some of our favorite restaurants are: Wooden City, Asadero Sinaloa, Marzanos, Toulouse Petit, Asado, & Sisters and Brothers.

What do you miss when you’re outside the PNW?

P&Js: The 4 seasons, the drinking water (you can drink right out of the faucet here), fresh air, and you can't beat our summers!

Wildest PNW experience?

P&Js: Meeting each other in college while attending Central Washington University in Ellensburg, WA
